Being lazy and hungry is a tough call. You want to eat something wholesome, yet you are too lazy to cook a full course meal. Khichudi is the answer to such situations. A full bowl of khichudi is a life saver during such times.
This quick and easy khichudi recipe is kid friendly and you can adjust the spices according to your whim. Pour extra water if you want the khichdi to be runny.
Ingredients:
½ cup Gobindobhog rice ½ cup moong dal ¼ cup peas 1 – 2 carrots, chopped to 1 inch size 1 tablespoon ghee 1 tablespoon cumin seeds 1-2 bay leaves 3-4 whole red chili 1 tablespoon ginger paste 1 teaspoon turmeric powder 1 teaspoon chili powder 1 ½ teaspoon cumin powder 1 teaspoon coriander powder ½ teaspoon garam masala Salt to tasteDirections:
In a pan heat the ghee, add the bay leaves, red chilies and cumin seeds. As the seeds start spluttering add the moong dal, and fry till the dal starts changing color to light brown. Add the rice and mix well
Add all ground spices and ginger paste, fry for a minute more and pour in about 2 cups of hot water. Cook till the dal is half cooked, about 7-10 minutes.
Put in the vegetables and boil till the vegetables are cooked well. Sprinkle the garam masala, and serve hot
